Is it completely public with all their gameplay exposed like sequester? Do we know who voted who off? Are they allowed to talk game off camera? Does the public affect the gameplay? I'm a bad fan and only watched the premiere and most recent episode where joseline told me off for showing fake love! I plan on following from now on though.

hey timster , the public doesn't affect any outcome as its like BBUS (unless a twist will come along). Most gameplay is off camera cuz if its in episodes it will be exposed which is the unfortunate part of this, BUT in the episodes u get to see competitions, ceremonies, evictions and any drama that comes with that, + diary rooms and some interactions, all edited so u can have the closest thing to an actual show :P
they only leak if they want to, cuz contestants know that diary rooms can be broadcast, so they can choose to keep quiet as well (aka joseline leaking screenshots of her and tim last episode) timster
